What is OOTA-YA (大多屋)?

Welcome to OOTA-YA (大多屋), a genuine slice of Toyama, Japan, right here in Victoria! Founded in 1991, OOTA-YA (大多屋) specializes in Masu Sushi, a traditional type of seasoned salmon Oshi Sushi. Led by Yudai Teddy Tateno who proudly carries on the legacy from our flagship location in Toyama, our Victoria restaurant continues a 33-year tradition of excellence. At OOTA-YA (大多屋), we blend authentic Toyama flavours with creative culinary approaches. Join us to experience the unique heritage and tastes of Toyama through our expertly crafted sushi.


What is Masu Sushi?

Masu Sushi, a traditional seasoned pressed sushi originally from Toyama, Japan, features region-native masu salmon. This 300-year-old culinary tradition involves marinating the salmon in vinegar, layering it with sushi rice, and pressing it into a wooden mold to form a compact block. The block is then wrapped in bamboo leaves, which not only preserve the sushi with their antimicrobial properties but also enhance its flavour with a subtle grassy aroma. This technique showcases traditional Japanese food preservation methods, offering both practicality and aesthetic appeal.

He grew up in the kitchen watching his father master the art of Oshi Sushi, which ignited his passion for sushi making. After university, he ventured into the world of media, working with newspapers and TV stations, which broadened his perspective. However, working in media, he felt a strong desire to introduce Masu Sushi, a cherished dish from his hometown, to a wider audience. With valuable experience gained at a popular sushi restaurant in Vancouver, he opened his own establishment in the scenic city of Victoria in January 2024. He enjoys connecting with the welcoming community in Victoria and looks forward to inviting you to his sushi restaurant.
